Spice Route Tarragon - the little dragon

French Tarragon is the
most popular variety known for its licorice-anise
aroma and its lingering appetite appealing
flavour when compared to Russian and Winter
Tarragon. Like most herbs, Tarragon is native
to the Mediterranean region and its name
is derived from the French word 'estrangon'
meaning 'little dragon'.
Tarragon
from our farms is harvested and dried using
a unique process to help retain their characteristic
anise-like aroma and tangy taste.
Tarragon is very evident
in French cuisine and now commands a liking
in most Western and European kitchens. Tarragon
is an important herb in salad dressings,
fish, chicken and meat dishes and it adds
flavour to mayonnaise, butter sauce and
dressings.
